Apple Cake

As the weather slowly changes from summer to fall, I am reminded of my grandparents apple room. My grandparents, who are in their mid-80’s, have a small apple orchard in the back yard, that they still maintain. Every fall, as the apples become ripe for picking, the apple room fills up with a few varieties of apples. The smell…oh the smell. It is the most vivid smell memory I have. You walk into the small apple room and you are surrounded by the smell of crisp, fresh, tart apples. To me, there is nothing better.

Fortunately for me, my boyfriend works at the local organic Co-op and brings home random boxes of fresh produce everyday.  Usually, there are lot’s of apples that are perfect for baking (whatever doesn’t go to the horses that is).

Here is my apple inspired Recipe.

Gluten Free Apple Cake

1 1/2 cup Brown rice flour
1/4 cup Tapioca Flour
1 tsp. Baking Soda
1 tsp. Xanthan Gum
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
1/4 tsp. ginger
1 cup Brown Sugar

1 egg
1/2 cup Olive oil
1/2 cup Applesauce
1/2 cup rice (almond) milk with 1/4 tsp. vinegar added
2 Tb. Honey
2 tsp. vanilla

2 rounded cups chopped apples

Preheat oven to 350.
Grease cake Pan.
Combine dry ingredients and mix together. Set Aside
Combine and mix wet ingredients together.
Add wet mixture to dry mixture and stir until well combined and smooth.
If batter is too thick, add tbs of milk at a time until slightly thin cake batter forms. (But not too thin)
Add 2/3 of the apples to the batter and mix.
Pour batter into cake pan and top with remaining apples.
Sprinkle with sugar.

Bake in the center of the oven 40 – 50 minutes, until a nice golden brown.

  1. I so wish I could have been able to be at grandma and grandpas in the fall… All those apples… I did however get to enjoy their homemade apple juice… Happy blogging Erin… LOL Cuz…

  2. This is wonderful! I’m so glad to see you have an asian pear recipe in here. Is there any chance you will be posting up a pancetta wrapped turkey meatloaf with a sun dried tomato & pepper sauce?
