Why spend money on packaged granola bars, when you can make your own! I have a hard time finding gluten free granola bars as it is. This recipe is super simple and delicious. Feel free to add your own favorite ingredients to make them your own. Wrap them in saran wrap and take ’em anywhere!
Almond Butter Honey Granola Bars
1 tbsp coconut oil
1/2 cup raw honey
1/2 cup real maple syrup
1 cup almond butter (can sub. peanut butter)
1 tsp. pure vanilla extract
4 cups gluten free oats
1 cup shredded coconut
1/2 cup raw sunflower seeds
1/4 cup milled chia or flax (optional)
1 tsp. ground cinnamon
Preheat oven to 350 degrees. Grease large baking pan with coconut oil.
In a small saucepan over medium low heat, mix honey, maple syrup and almond butter. Whisk until combined and remove from heat and whisk in vanilla.
In a large mixing bowl, combine oats, shredded coconut, sunflower seeds, milled chia seeds and cinnamon.
Add almond butter mixture to oat mixture and combine well.
Pour oat mixture into prepared pan and press firmly with your hands. You may need to grease or wet your hands, as it is a bit sticky.
Bake 10 minutes and then rotate pan and bake another 10-12 minutes to ensure even browning. More browning = more crunch.
Remove from oven and let cool 10 – 20 minutes. Cut into desired size and wrap with saran wrap. Enjoy! 🙂
